Za'atar-roasted carrots with kale, freekeh & blood-orange maple dressing

October 20, 2016 Cindy and I wanted a substantial salad to accompany a few bits and pieces that we had to finish off in the fridge. I turned to Community , deciding that this mix of carrots, kale and freekeh would do the trick. It's certainly substantial: a kilo of carrots plus the kale and freekeh meant that we were eating this over about 6 meals. So it was lucky that it was so good - the dressing (we subbed in orange and grapefruit for the blood orange) was sweet and tangy, but the salad was delicious enough even without it. It's tempting to skip the hazelnut roasting and crushing, but they crunch they add was definitely worth the effort. We haven't had anything disappointing from Community and this continued our run - a reasonably simple salad with a nice mix of flavours that tastes just as good as leftovers a day or two later. Roasted pear & gorgonzola salad

April 10, 2016 We were overdue for a home-cooked meal in general, a healthy one in particular and, I thought, another go at the Community cookbook. Once I saw the recipe for roasted pear (in season!) and gorgonzola (delicious year-round!) salad I didn't look any further. A look in the cupboard and the shops took me a little off recipe. I added a whole head of cauliflower to the recipe for some extra golden-edged substance. Most of the pears in our neighbourhood were rock-hard and not ready for dinner, but Michael found a few nashi pears at Pachamama that were worth a shot. The white wine (not white balsamic) vinegar and black lentils in the pantry would surely do the job. Sage leaves were plentiful but didn't fry to a crisp as they were supposed to. The ingredient proportions didn't quite add up (too, too many lentils and not quite enough dressing) but it was easy to portion out our own plates and make plans for the leftovers later. Spicy fried edamame & tofu with eggplant & soba noodles

November 1, 2015 We've been giving Community a good workout lately and having some very successful meals . It was our go-to book again for a healthy Sunday night dinner, with Cindy picking out this soba, edamame and eggplant salad. We made a few changes to the recipe, first adding in some tofu to make sure we had lots of leftovers for lunch, and second switching the edamame out for broad beans because that's all we could find at the shops. There are a few processes involved in making the dish - you've got noodles to cook, eggplant to roast and a frying pan full of tofu and beans to manage - but everything can be done while the eggplant is roasting and it all comes together easily in the end. The pay-off is a massive saucepan of delicious noodly salad, with a mildly spicy sauce and a nice mix of textures from the tofu, beans and eggplant. This version of the recipe makes a lot of food, so it's probably worth rescaling things a bit unless you want to eat it every day ...

Char-grilled broccoli with chickpeas, almonds, lemon & chilli

October 22, 2015 I'm really enjoying my new cookbook and, after a load of chips at trivia on Tuesday, I decided that Wednesday was a good night to get my salad on again. This broccoli-based salad had a few advantages: it looked simple to make, it had a good mix of veggies and protein, and it seemed like it would be goddamn delicious.  It lived up to all three promises, although the preparation was a bit more involved than I initially imagined. It would work a lot better if you cooked the broccoli on a bbq as the recipe suggests, as cranking our non-stick frying pan up to charring heat levels left me a bit on edge. And that made it hard to remember to check up on the toasting almond flakes. Luckily, I just about got things right - the broccoli could probably have charred for a bit longer to get more of the smokiness that the recipe promises. October 17, 2015 I recently had a bit of a work shake-up, meaning I left a research group in Sydney that I'd been working with (mostly remotely) for the last three years. We had a lovely farewell dinner earlier in the week, and I was thrilled with the parting gift they gave me - the Arthur Street Kitchen cookbook Community . I was even more thrilled to realise that I could bust this book out straight away, to contribute to Hayley's birthday potluck picnic. The book's probably 70% vegetarian and 30% vegan and, to make sure everyone picnicking could indulge, I focussed on the vegan options. The Thai kohlrabi, cabbage and apple slaw was tempting, as was the smashed chickpeas with broccoli and dukkah, but in the end I went with one of the dishes featured on the cover: ginger-peanut kale with tofu and quinoa.
